About us

Our story

A dialect name, a cellar in the ancient heart of Bari, a cuisine that tells the true Bari tradition.

The name

The name that says it all

“Uascézze!” to pour wine with joy

in Bari dialect means spilling wine on the tablecloth — a gesture of pure joy, like a festive toast among close friends. From this moment of genuine happiness the restaurant's name was born, and from this same spirit comes every dish we bring to the table.

The word uascèzze refers to a festive meal among friends, but also to an equally joyful state of mind — a promise our menu rigorously keeps.

The place

A step back to the Middle Ages

A small gateway leads into a typical "sottano" in the historic centre of old Bari. A series of rooms unfolds creating a fascinating and evocative journey through ancient stone walls.

The atmosphere is warm and welcoming — it feels as if you have taken a step back to the Middle Ages. Authentic and genuine right from its location, the restaurant brings together traditional flavours in a context that amplifies their authenticity.

The cuisine

The flavours of the land

The menu focuses almost entirely on the Bari territory, starting from the dishes of the great tradition: potatoes, rice and mussels; broad beans and chicory; parmigiana; stuffed mussels; braised meat rolls in tomato sauce; legume soups.

But also orecchiette, calzoni, tiella and braciole — prepared with careful research into ingredients, chosen from small local producers who work with passion. Authentic and genuine, like the Bari of old.
